Addie will be a year old soon and I will not be there for her first birthday party. She just turned 11 months so I said to myself . . I’ll just make cupcakes and we’ll have our own “Almost Birthday” celebration.
I made this cupcake recipe and this icing recipe. I do believe they were the best cupcakes I’ve ever made! I love the cupcakes from a bakery in Lake Charles and I think these were better! The icing was quite different from the bakery icing but it was amazingly delicious .. and buttery .. and good . . and probably very unhealthy but . . every once in a while it’s ok.

I am so glad you are having this time with her now. She is a real live doll:) One good thing about being a grandparent is that you can Love them and Leave them. Another words we get the fun and not the responsability. We have 10 grandchildren, and until our recent move to Alabama, the closest ones were 12 hours away. I measure time that it takes to drive. So for most of the time it has been 6 days, 6 days, and the 12 hours. We have missed most of their lives, but that just makes me cherish the times we do have with them even more. So Happy Unbirthday to your granddaughter. Continue building all the memories that you can.

I’m pretty sure birthday cakes/ cupcakes aren’t supposed to be “healthy”. You have all year to make healthy choices, birthdays are the one day (at our house)that you can eat any and all your favorites with no guilt. The only trouble with that is my husband tries to take it farther and have birthday weeks or weekends. Not good! LOL!
