Never had I grown patty pan squash, and more surprising . . never had I tasted it. This year, while shopping for plants, we picked up a couple of patty pan squash plants. I totally forgot about them til I was out picking squash the other day and was surprised to find the weird little white ones on the plant.
I wasn’t sure if they were going to be hollow inside, similar to butternut or spaghetti type squash, or more like yellow squash. I googled recipes and found several that used a stuffing .. bacon, bread crumbs, cheese . . but that wasn’t what I wanted. I saw one that sliced and baked the squash so I came up with a plan.
I sliced the squash and put it in a baking dish.
Salt, pepper, olive oil and chopped fresh basil were added.
Then . . remember the bruschetta I made towards the end of last week? What was left over was poured over the top.
The lid was placed on the pan and into the solar oven it went.
The result:
It was delicious! Vince said “I hope we have more of this!” That’s always nice to hear.
Once again, I took a big bite of the squash before remembering to take a photo. Bad blogger! The ham was cooked in the crockpot and it was good too.
So, today, I felt very energy efficient and I hope the electric company gives me another smiley face!
- I hung the laundry on the line
- I cooked the squash in the solar oven
- I cooked the ham in the crockpot
- I watered all the fruit trees using the solar powered well
I’m trying . . really, I am.

Hi Judy,
Hope you’re having a greatly day!
Just wanted to tell you of another way to prepare your pattypan squash, should you have a lot of it, and want to try a sweet version of a dish.
Growing up in s. La., Dad always had this squash in summer.
I have never eaten it savory. Mom always made squash pudding, which she called “la puttin”. It was basically peeled, cooked down, then spices, egg yolks, and butter were mixed in, and a meringue was put on top and baked. A friend sent me a recipe today, where it was made basically the same using whole eggs but baked in a pie shell.
Anyway, just food for thought. As always, enjoying your site so much!

Your patty pan squash looked soooo good. We used to have that when I was a kid. Grandma would just salt, pepper and flour it and fry it like yellow squash. As well as I can remember it was pretty good.
Another way she fixed it was to steam it and some onions til tender then mash it saving a little of the cooking water. She would add eggs, salt, pepper, a little garlic salt or powder and about 3 pieces of crumble crisp bacon. Then crumble about 5 or 6 saltines into the mixture . use enough cooking water to make it moist. Bake about 30 or 40 minutes in a 350 degree oven., good using yelloe squash too. This was one of my favorite squash dishes. I sometimes use saugage instead of bacon. So good!!!!!
Vince is a lucky man to have you cooking for him!! Wish I was your neighbor.

I always think about that, but never have bought one when I’ve seen them. I like the Italian bent to the recipe. I’ll try it next time I see them at a store or farm stand.

I’m not sure if I’ve ever heard of these! And I’m old and have been either gardening or living with gardeners my entire life. (now that I’ve learned something, I think I should go home from work).

I’ve seen all kinds of squash at the grocery, but I’m not sure I’ve seen a white one either. That looks so good I want to lick the monitor. And the solar oven? How did you come up with that idea? I’m lovin’ it. Keep the heat out of the kitchen and let the sun do the work. I wanna be your neighbor too, or be your adopted grandma. Awesome!

You’re doing great! I’ve been using the gas grill more often lately. Just a grilled cheeseburger tonight (no bun) but I did also have grilled asparagus with it. I love grilled vegetables. Your patty pan squash with the bruschetta topping looks really yummy. I’ll have to try something like that!

Your squash looks delicious! Great idea to add the bruschetta leftovers!
I could use a solar oven like yours!
Like many people in SE TX, I have a second oven in my garage which allows me to cook without heating up my house, but a solar oven would be even better!

I’ve never had patty pan squash. Yours is making my mouth water. I’ll have to see what’s at our produce market.
