There are so many tomato based dishes that are much better with fresh tomatoes. Bruschetta is one of those dishes.
I never really use a recipe. Just peel and chop some tomatoes, a little garlic, onion, basil, olive oil, balsamic vinegar and Italian type spices. Last week King Arthur sent out a recipe for bruschetta that included cannellini beans. I happened to have some of those so I added them to the bruschetta I made yesterday.
For dinner last night, we had fresh sourdough bread, and Vince grilled it to toast it and we had that with our bruschetta.
The beans added a nice texture. Since they don’t have a lot of flavor, and they absorb the flavor of the other ingredients, there were a good addition and I’ll use them again.
Nothing like cold bruschetta on toasty bread on a hot summer night!

yum! yes, the coolness of the veggies on that nice toasty bread, is soooo refreshing! and i think i like the addition of the beans–gonna have to try that, thanks for the tip!
off to go cut my fabrics now!!! YEAH!!!!! oh, i do have to do it wearing my perscription sunglasses tho coz i left my regular glasses at my daughters this morning….dag nab it! gonna have to turn the lights on to do the cutting by the natural light window in order to cut right LOL

That looks soooo good. I have my sourdough starter going again and will be making my bread soon and filling the freezer and supplying the neighbors until they start slamming their doors when they see me coming. I’m going to try your bruschetta when I can get the fresh tomatoes.

Yum, as you said, a great warm evening meal. Have you thought about trying some pine nuts mixed in? I like a little extra crunch in the veggies.

Definitely yum , jum for sure. Tomorrow I’m going to get some sour dough bread fro Bread Co. and buy tomatoes (since my one tomato plant has not even vloomed yet) and mke up your recipe. It sounds delicious, right now!
