Dinner tonight is going to be so good! I had steaks out to grill. Any time I’m not wanting to cook and need something quick .. it’s steaks on the grill. Then I saw that a friend from Louisiana posted a recipe for Eggplant, Crab & Shrimp Casserole. I have Louisiana crabmeat in my freezer; I have crawfish in my freezer, and I have eggplant in my fridge. I substituted the crawfish for the shrimp. Thanks, Sylvia, for sharing that recipe!
One for the freezer and one for dinner tonight, along with pinto beans (that were to go with the steak but I want them tonight), warm, crusty bread and fresh tomatoes from the garden.

Somehow my bowl of burgoo doesn’t sound as good as it did when I got it out of the freezer earlier today. What time is dinner?

Oh, what I wouldn’t give for a bowl of burgoo. When we moved there, I didn’t like it at all. I said . . if I’m going to live here, I’m going to learn to like it and now I crave it. I’ve made it a few times but I’d rather have a big old bowl from the Moonlight!

YUM. Glad I didn’t see this before I ate the rest of Beef Vegetable soup that I took out of the freezer yesterday. It was “ok”, but, if I had seen your dinner the soup probably would have tasted like cardboard mush :-).

I don’t cook much anymore…hubby would just as soon eat out and what he likes isn’t always my “cup of tea” as I am trying to eat healthier. (He’s not into healthy, he’d rather have what he likes and he’s REALLY picky.)
However, tonight I pulled some cod out of the freezer, roasted some vegetables and cooked up some rice. It was delicious — in my estimation, and if you remember the Life Cereal commercial from years back, I can call out, “He likes it, Honey _really_ likes it!!

Dang! I wish I were there too! Barring that, I’d like that recipe along with the rest of the gang. And would someone please tell me what “burgoo” is? I’ve never heard of it! Hope you enjoyed that yummy supper – I’m sure y’all did!
