Yes, I’m writing this post before 11 a.m. but dinner is on my mind. We have a wonderful little meat market here. From them, I buy thick pork chops, boneless chicken breasts, bacon on a 5 pound box with the pieces individually frozen so I can take out as few as I need and sausage patties that are frozen the same way.
The meat market that I love best of all is Miiller’s Smokehouse and any time we are near there, we stock up on their meats. One of the pieces we got when we were there Friday was a beautiful chuck roast, which happens to be my favorite roast.
Somewhere under the homegrown carrots and rosemary and storebought onions is a chuck roast that will roast in the oven for the next 3 or 4 hours . . while I take a nap!
Yesterday Vince and I both spent the entire day working outside. It was windy, there’s pollen and dust and today, we’re both paying the price. So . . a Sunday afternoon nap is just what the doctor ordered. I’ll be dreaming of chuck roast, mashed potatoes and gravy!

Guess we will have to stop there-never have as often as we pass it. But will try it out. Oh yes, the smoker is going- 2 chickens!

Yummy, we’ve just finished up a beef roast (eye of round) that I did in the crockpot w/Lipton soup & beef broth. I slice it thin, toast some sourdough bread, put the heated beef on along with smoked gouda cheese and serve with a bowl of au jus. Oh, divine!

definitely will have to look up a chuck roast on the next grocery run. we’re expecting cool temps for the next week, so good smells from the kitchen would be a great plus.

Great minds think along the same lines, instead of pot roast I’m having oven baked corned beef brisket, roasted potatoes and carrots, and Brussels sprouts. Good eating!

Chuck is also my favorite roast and I cook it in the oven. in a similar pot…so easy and so good!!

well…I am on the Truck and I kept telling my hubby we needed a crockpot. Today he relented and we purchased one 🙂 I got a chuck roast some seasoning potatos and crarrots and started it….Ohhh my the truck smelled good! We just finished eating and hubby is happy!! We are in Rocy Mt VA. delivering tomoorrow and then going back to Charlotte NC to pick up a composter that a lady bought and never paid for from a dealer in our area. It is nasty!! We went and looked at it/ It’s behind a barn and full of horse poop and wood chips …Should be fun trying to get an excavatpr ion there, take it apart. ;oad it pn the truck, clean it and deliver it in FL…Then it is Vaca time!! We are going to the Keys 🙂 Prpbably be doping sopme more crockpot meals 🙂 it’s expensive for Truckers to eat out all the time

Oh yum! Tonight I’m going to be having my own version of Italian fish stew. I have cod, salmon, and shrimp all just taken out of the freezer, and think I will stop at the market for some scallops. Mostly just a tomato-based broth and some green veggies with garlic, oregano, etc. Just sounds good today.
