Where Did The Day Go?

Most of my days go by so quickly but today has just flown by. Other than sitting down for lunch, I didn’t sit down once til just before 5 p.m.

Today is Vince’s birthday . . a BIG one!  We had planned to go to San Angelo today and shop . . you know how everyone gets to do their favorite thing on their birthday!  Then the guy with the dozer said he could come here tomorrow and work so Vince decided that rather than using two vacation days, he’d just take off tomorrow.  Steve, the dozer guy, is going by Tractor Supply with his trailer to pick up our 3,000 gallon water tank and then he’ll come here and make a foundation for the tank and get it all set up.  We need a few more loads of rock so he’ll get that delivered and spread . . that’s the plan anyway.

Even though Vince really wanted to go to San Angelo today, and I would have been happy to go with him, I was happier to not have to go.  This morning I trimmed a few plants that needed pruning, watered all the fruit trees, played in the garden for a while and then as soon as Vince left to go back to work after lunch, I began working on dinner.

This recipe may have taken me longer to make than anything I’ve ever made.  I sure hope it tastes good!

Vegetable Lasagna

The recipe made these two dishes, which will give us more than enough for two meals each, as well as a smaller one meal size dish which I gave to the neighbors.

I’m not saying what’s in it and I’m not sharing the recipe here til after the neighbors have theirs for dinner tonight because Mr. Neighbor is a bit of a picky eater (though he’ll deny it!) and he sometimes reads the blog so  . . after dinner, I’ll share a picture of this dish all baked up, as well as a link to the recipe.
