The tofu tacos were delicious! In fact, Vince asked if we could have them again for lunch one day this week. This is the recipe that I started with but I changed things up a bit. Here’s what I did:
Tofu Tacos
1 – 14 oz. package extra firm tofu (1/2 of a package is all I used for the two of us)
1 packet taco seasoning mix or make your own
shredded lettuce
chopped tomatoes
grated cheddar cheese
chopped cilantro
2 T. oil
1/2 of one onion, chopped
corn tortillas
Chop the tofu into small pieces. I cut it into slices, and then into squares and then chopped it from there. Drain the tofu as much as possible by pressing between paper towels, and changing out the towels once they become saturated.
Sprinkle the taco seasoning over the tofu. Use as much or as little as desired. For the half package of tofu, I used about half of the taco seasoning packet. Let it sit out for 10 to 15 minutes to absorb the flavor of the seasoning.
In a skillet, add the oil and saute the onion. Add the tofu and cook til the tofu is well done — a bit crunchy on the outside.
Heat the tortillas. I simply lay them on top of the gas stove burner, turning with tongs.
Layer the tofu, lettuce, tomato, cheese. You could add avocado, black olives, sour cream . . whatever you desire.

Isn’t Tofu made from soybeans?? So wouldn’t it be GMO soybeans? I guess I could google that but just wondering out loud…..

It states on the package that it’s made from non GMO beans.
