After digging about 10 pounds of carrots, and cleaning them, I proceeded with the pickling process.
Pickled Carrots
Some of the carrots are more orange than others, there are a couple of purple carrots in there that the grasshoppers missed in the Fall. The green thing is a sliced jalapeno. There are mustard seeds, red pepper flakes, celery seeds and fennel seeds in the jars.
For the first time ever, I had a jar break in the canner. These were getting processed by water bath and the bottom just separated from the sides of the jar and I lost a whole jar of carrots. Thank goodness it was a pint and not a quart.
From 10 pounds of carrots, I got 7 quarts and 3 pints but since one broke, I ended up with 7 quarts and 2 pints.
There’s still plenty of carrots in the garden that I’ll can in the next few days.

Those look yummy! Sorry you lost that jar, more of these will be a good thing! Was the jar one that had been used before? If new you might email manufacturing company. There could be a flaw.

What do pickled carrots taste like? The only pickled thing I have ever had is dill pickles. My husband likes pickled elk but I won’t try it. Chemo has messed up my taste buds so about the only thing I can really taste is Hot Tamales (the candy). Your jars look pretty.

Wow, from the list of ingredients your pickled carrots must take amazing! It’s still too cold here in WA to even think about planting carrots.

those look great. i had 2 jars break just like that when i was doing pickles one year. i wondered if it was because we use the jars over so many times.

A productive day! I had a jar “separate” on my once when I was making jelly – I was lucky I didn’t get burned. I guess it happens every so often – I am glad that it is not a common thing though! Cheers! Evelyn
