As far as desserts go, my favorite is pie, then cookies, then cake. It’s really a close race because I love them all. I often share the things I bake with our neighbor and they share things with us. I got the bright idea to order mini pie pans and I could make smaller pies and they will be easier to share than trying to cut a pie and take part of it to them.
Using my favorite pie crust recipe, I made 1-1/2 times what I usually make for a one crust pie. It was so easy to make the smaller pie crusts and get them into the pie plates without them breaking.
The Meyer Lemon Tart filling from the freezer thawed and I mixed it with the eggs, butter, salt and cornstarch, and poured it into the six pie shells.
I wasn’t sure how long they would need to bake but it took the same amount of time as would the full size pie.
I’m not sure if it will work with all recipes but these slipped right out of the pan and I was able to put them on a plate to share with the neighbor. My neighbor earned extra points because he told me that was the best lemon pie he’d ever had! 🙂
The middle one on the front row is out of the pan. Not sure if you can see it or not.
I’m thinking it would be a great idea to make a variety of pies . . maybe coconut, chocolate, buttermilk . . and give them as gifts. I could have lots of fun with these little pie pans.

I make individual serving pies just in a regular 6 or 12 cup muffin pan. It works really well for the two of us. I usually do fruit pies and then freeze part for another time.

I used to do the same thing with the pie tins the size of individual pot pies. When we had lots of peaches or apples we would make pies to freeze to be baked later. I would make small pies so I could take them home with me when I lived alone.
Your little pies appear to be smaller and maybe the right size for individual servings. Wish I was your neighbor, because I am the only one who eats lemon pie and restaurants don’t make them sour enough for me.

Yummm – pie — my most favorite of all desserts too. Home made lemon meringue, peach, raspberry and coconut cream top my list but I don’t know that I”ve ever met a pie I didn’t like (which is obvious) 😉 (okay – plain custard pie I hate) but I love my little pie tins. They are deep dish ones and a nice thick metal so they cook more evenly than the little tinfoil ones I used to use.. I use them for pies, quiche, cornish pasty – great to pop out of the pans, stitck in the freezer, and then just drop them back in if it’s something I want to reheat in the oven. Dang! now I want pie! There’s no peaches, no lemon juice and no coconut here – rules those out but there “may” be some frozen raspberries yet in the freezer and I know there’s a few blueberries. Hmmmmmmmm

Pie is my favorite too, but not the rest of my family so I don’t ever make it. Those little pies would be perfect, some for me and some to share! Is it a special pan, where did you get it? I like the Betty Crocker pie crust recipe, Where did you get yours?

I just returned from a retreat where the food was fantastic. The cook is an award winning retired home economics teacher, so everything she makes is delicious. For dinner one night we had the best coconut creme pie I’ve ever tasted. Then we asked if she could make lemon one the next night. She did and it was better than the night before. Wish I could make a good pie crust. Your minis look so yummy my mouth is watering. Now I have to find something sweet to fill my ‘sweet tooth. Those pans are sure cute.

Have you seen the single serving pies in the Mason jars? Amazing! You can make up the pies and freeze them and then bake them right from the freezer. I had one a couple of years ago that a friend gave me and it was fantastic (apple pear filling).
