Have you ever heard of a cracker pie? Years and years ago, we made them all the time. I don’t know what made me think of them the other day but I’ve made two in the past few weeks.
They taste a lot like a baked meringue . . with pecans.
Served with a bit of whipped cream and it’s so good . . and so easy!
Cracker Pie:
3 egg white
3/4 c. sugar
1 tsp. baking powder
3/4 c. coarsely chopped pecans
pinch of salt
20 Ritz crackers, crushed (crumbled with your hands is good enough)
1 tsp. vanilla extract
Directions:
Spray a pie pan with non-stick spray.
Beat the egg whites till stiff. Gradually add sugar. Combine the remaining ingredients and mix well.
Pour into the pie pan and bake for 25 – 30 minutes at 325º.
Cool completely before cutting. Rinse the knife after each cut. If the knife is sticky, the pie will crumble. Serve with sweetened whipped cream.

My sister-in-law used to make Mock Apple Pie with Ritz crackers. I wonder if I have her recipe?

Yes, I remember them. My mother made them. Why am I remembering Saltines ( perhaps not). Anyway I’m going to try one and not tell anyone and see if they can guess the ingredient. You know you can’t tell what they are when the pie is baked. Thanks, Judy.

My recipe uses soda crackers. When baked and cooled, I whip real whipping cream with powdered sugar and a bit of almond extract and spread that over. This is all done the day before or early morning on the day it’s served. It is best if allowed to set and flavors blend before needed. I, also, use a 9″x 9″ pan rather than a pie dish cuz it’s easier to serve. We have a pie cherry tree and serve cherry sauce over this with toasted slivered almonds–beautiful and delicious!!!

My grandmother made a Ritz cracker pie that tasted like an apple pie. We never found her recipe however, so I’m sure it was something she just made from memory. I remember it tasting really good.

Yes, my Aunt made Mock Apple Pie with Ritz crackers about 20 years ago. She made it for my husband, he ate it and liked it, then we told him what it was made of and to this day he don’t eat apple pie unless he ask if it is made with Real Apples! LOL!

My friend Janet-Lee makes lobster pie using Ritz Crackers and lots of butter! I’m wondering if the lobster and the fat would be enough protein to counteract the carbs in the Ritz crackers for me. I loved Ritz crackers when I was a kid — especially with peanut butter on them!
