So many asked about using the whole lemon. Meyer lemons have thin peels and Meyer lemons are not as sour or strong as are most other lemons. Yes, for the Meyer Lemon Tart, you use the whole entire lemon — everything except the seeds and to tell you the truth, every now and then a seed ends up going through the blender and it didn’t bother me a bit.
I would not try using the lemon peel if I were using other types of lemons.
Based on Sheryl’s advice, I slice the lemon, remove the seeds, put the slices — peeling and all — in the blender. Turn the blender on til the lemon looks like it’s all blended up and nothing much resembles a lemon. Add the 1-1/2 cups sugar and continue blending til it’s all . . well . . blended! At this point, either pour the concoction into a freezer bag or add the remaining ingredients to make the tart.
Now you know why I’m not a recipe writer. It’s late .. I’m sleepy . . Speck is doing great. He had a tooth that had to be pulled. The coyotes are so darned loud outside. We can hear them even inside with the windows closed and the TV on . . the satellite gets turned off the day after the Super Bowl, which, according to my calculations will be two weeks from today . . but who’s counting.

I went and researched Meyer Lemons. i am getting a tree in March when the weather permits them shipping to me. in the meantime, i have ordered a box of lemons on eBay from some people in Louisiana. have printed out your recipe to try as soon as they get here. thank you, Judy. you give me so many cool things to try.

Thank you for the update on the use of the meyer lemons….I would have used a regular one and my tart would have been messed up. You know about that sun thing…..I always beat the sun up…..in the months of Dec and Jan…..the rest of the year, the sun wins…. Sleep well and don’t worry about those coyotes I don’t think they like to eat window screens, they like meat better.

I had been wanting to try this recipe since this was the first year my Meyer lemon produced fruit. I was going to a tailgate party, so I used the individual graham cracker crusts that come in small aluminum pans. Perfect! Everyone got their own little tart and they were a big hit.
