My friend, Judy, had sent me this recipe and I made it last night and it was delicious! I served it with coconut rice which involves opening one can of coconut milk, bringing it to a boil, adding 1 tsp. salt, 1 cup of rice; turning down the heat to simmer, adding a lid and cooking til done. Then I added about 1/4 c. chopped cilantro and about 2 T. chopped Thai basil. Yum. And, sorry . . I was trying to get everything done outside before the storms got here (they never arrived), and get dinner done and then I was trying to hurry and eat and get the kitchen cleaned and take my shower because if the electricity goes off, we have no water. Vince can fire up the generator but I doubt he would do that the minute the power goes off . . knowing Vince, he’d wait at least a week before using the generator.
But . . back to dinner. We were sitting there and I was trying to be a nice wife and carry on a caring conversation. We were talking about which dinner Vince liked best — the dinner I fixed last night or the enchiladas the night before. He said on a scale of 1 to 10, they both rated 11. No help there! Then we had this conversation:
Me: What concerns you the most these days?
Vince: What do you mean by “concerns”?
Me: You know . . what do you keep thinking about a lot?
Vince: I guess the thing I think about most is whether you’re going to make pizza this week? Tomorrow is Thursday and we haven’t had pizza this week!
That’s what concerns my husband . . that’s what keeps him awake at night . . wondering when we’re having pizza again. I guess on a scale of 1 to 10, my pizza might rate 12 with him! 🙂

somehow I think if Vince can’t take a shower or flush the toilet he might get that generator going pretty quickly. 🙂

haha! My hubby is the opposite – he’s not a fan of cheese, unless it’s on nacho’s. He’s not a fan of pizza, but he’ll eat it. He does like kinds with a thin crust and ‘other’ type ingredients other than pepperoni & mozzarella. Of course pepperoni pizza is my favorite. So, I just have to make two kinds when I made pizza 🙂

How absolutely wonderful that Vince’s greatest concern is whether or not you’ll make pizza! Furthermore, how wonderful it would be if your lives were always so good that things like that were your biggest concerns! I’m glad your move to TX and all your challenges getting where you are at this moment led to this moment! ;-D

This really made me smile Judy. Not only that I know Vince adores you, even for more than your cooking, but that I could come here and have a little sanity and good thrown back into the world. I was just reading CNN and the local news and a few headlines on Facebook and it was just making me crazy and sad today. I’m so glad I stopped by to read your blog! Vince is a smart man, and I’m glad he doesn’t have big concerns other than the pizza one. Pizza is a big winner here too. Neither of us are too fond of the tomato sauce, so we use pesto, and love that as a base.

That’s awesome! I’m thinking I could manage making some homemade pizza crust. And we love pizza – even if it’s the “make at home” kind. Good idea! I think we’re doing stir-fry tonight, though. We really need to get in some more veggies!
I LOVE a really meaty pizza, but when I make it at home, I normally put olives, broccoli (lightly steamed), and zucchini. Am I strange, or what?! 🙂
