This week was our food co-op delivery. No doubt I won’t remember everything but we had beets, parsnips, celery, Romaine heart, potatoes, red peppers (those giant ones again), yams, cilantro, cauliflower, zucchini, cherry tomatoes and broccoli. Everything in this box was pretty normal . . nothing weird.
Beets are such amazing little things! I find it so odd that you can plant one little seed and get beets . . and they’re so full of all that red juice. How does that all come from those little seeds? We love beets and have plenty of them planted and some are up already.
The bundle of beets in our food box had nice tops on them so I fixed one of our favorite recipes that uses the tops and the bottoms.
The beets are seasoned and roasted. Remove from heat, peel and slice. I usually peel them under running cold water because they’re too hot to handle and I’m in a rush.
In a little olive oil, saute some chopped onion. Add the washed greens. Cook the greens just til they’re tender, season to taste and drizzle with lemon juice. The greens go on the plate, topped with the sliced beets. A topping is made using Greek yogurt or I usually just put some plain yogurt in my wire sifter and put it over a bowl and let it drain. Then add some chopped garlic to the yogurt, add it to the top of the beets and top with chopped walnuts or toasted pine nuts.
We always run out of greens so if you know you’re going to pickle some beets or be using just the bottoms, that’s a good time to make this dish when you can have extra tops.
Yum! I hope we have a bumper crop of beets. Heck, I hope we have a bumper crop of everything! 🙂

We usually just boil the beets and greens separately and eat with butter. Just enjoying the flavor of the veggie. You have my mouth watering for them. Planting will come soon I hope!!!!!!!!!

Well this is wierd – I planted beets before (yummy) but, I never knew you could eat the tops. The tops always seem kinda picky or furry to me. So when you wrote you cooked the tops I went “yuck” right out loud. LOL

Beets..I’ve eaten them. They taste like dirt to me if one ever tasted dirt. Not on my list of delights. Do you know how to do the canned spice peaches? I so miss eating them at my grandmother’s house. She did them every year and I haven’t had any in forty or more. I also miss mustard greens like my mom made..always for my birthday at my request. That and southern cornbread and a spring onion. YUM! better than cake.

I too used to think they tasted like dirt, i think because of varieties they used to sell in stores & because I boiled them. Now, i roast them in the oven, just like Judi describes & they are scrumtious. Plus the varieties now sold in the store have better flavor. If you haven’t tried them lately, you might give roasting a try. I also love to grow them. Good luck!

Love beets and greens. We (DH & me) like them when they are about walnut sized. Pull from ground, wash thoroughly, clip off tail, throw on top of a pan of browned pork chops, add a little water for sizzle and cook about 15-20 min. They steam up nicely and the pork gives them a bit of flavor. YUM!

I just had beet chips at a restaurant, and they were awesome. Couldn’t stop eating them. I asked what they do to them ( marinate or anything) and the waitress just thought they sliced them, fried them, with salt and pepper. They were amazing. Makes me want to grow them just to have those! And SO good for you, if you need to eat chips! Yumm!

Nothing taste as good as a farm fresh beets roasted…….delicious.
I never knew how good they were until I had them that way.

I always thought beets were those nasty things from a can…….fresh is so different.

Beets! One year many many years ago when we were first married–I asked my husband if he liked beets. Sure. So I planted beets. Lots of beets. 3 different kinds. I had good soil. Plenty of water. And the garden produced BUCKETS of beets. I was busy canning beets. pickling beets. Same husband asked me “why so many beets?” “you said you LIKED beets!” And he said “sure I like beets–once a year!” the hogs loved the beets. don’t ask about the potatoes……
