Yesterday was food co-op day. We’re able to order large or small boxes of vegetables and/or fruit or a large or small combo box, plus we can order boxes of all kinds of other fruits and vegetables. I ordered extra boxes of carrots (23 pounds) for juicing and an extra box of kale (24 bunches). I always order more lettuce. Here’s what my sewing room fridge looks like . . stuffed to the gills with kale and lettuce.
We love kale! Last night we had soup with one bunch of kale in it. Tonight we’re having this chicken recipe. I can hardly wait til dinner!
My biggest complaint about the carrots in the grocery store is that they’re the size of my little finger so by the time I peel them, I end up with a carrot as thick as a toothpick. Look at the size of these carrots!
That’s a 9″ x 13″ dish they’re in. They are huge and they taste good and they’re really juicy for our juicing. The rest of the 23 pounds is in a box in the sewing room. There’s no room in the fridge there or inside the house.
Also in our veggie box were two big stalks of fennel, celery, cherry tomatoes, sweet potatoes, yukon gold potatoes, red bell peppers, 2 bundles of red kale, parsley and that’s all I can remember but probably not all that was in there.
In the fruit box . .
Some of the fruit is already out and not in the picture so in addition to what you see, I had 5 or 6 kiwi, 4 avocados, a couple more oranges that I’ve already consumed, and maybe something else I don’t remember.
We go through the fruit very quickly but I’m happy to report that we used every crumb of the fruits and vegetables that we got 2 weeks ago and I’m sure we will again this time but we may be orange from all the carrots or green from all the kale!
