For those who missed the retreat, you missed Amy’s Puff Corn. It was so good but she also brought heirloom tomatoes. Amy is one of the San Angelo girls and that whole group was pretty amazing. I was feeling kinda bad for eating the crumbs out of the puff corn bag because I know I ate at least half of the bag but just when I almost felt bad, I noticed a whole bag. I think Amy’s Puff Corn is one of the reasons I’m on a diet today but I’d seriously forget about my diet if I saw a bag of that puff corn. Here’s Amy’s recipe:
Carmel Puff Corn
3 bags of Puff Corn
(I used Chester’s Butter Puffcorn 3.5 oz bags) (I think Amy said it’s by the Cheetoes in the store)
Open bags and pour into LARGE roasting pan
2 sticks butter
1 cup brown sugar
½ cup Karo
Cook till boiling, boil for one minute
Add 1 teaspoon soda and stir, mixture will swell up.
Pour over corn and stir
Bake @ 250 for 45 minutes, stirring every 15 minutes
OK . now I see the secret . . 2 sticks of butter. This stuff was so good. I know what I’m having for a treat when I lose about . . how many pounds?? 🙂

Can I ask a silly question? What is puff corn? I have never heard of it. If it is near Cheetos in a store, is it a similar product? Here I am saying it sounds delicious and I don’t know what puff corn is. Well you know – butter, brown sugar, etc… – it has to be delicious!!!

Puff corn is kinda like a really puffy cheeto . . you know . . those that are more round than crunchy?? But, it has no cheese on it.

That exactly is the problem. You can’t eat just one. I’ve already been trying to figure out how I could make it and hide it and eat it all so Vince doesn’t know I’m cheating. Anyone want to send me a big box of this already made? It would be much easier to hide if I didn’t have to make it! 🙂

Well, I did NOT eat much because there was hardly any left by the time I discovered it! Amy, thanks for the recipe; Judy, thanks to you too. It will be a nice change from rabbit food at our house!! LOL I’ll be making it in a couple months…..not doing much extra in the immediate future.

You might can thank me that there was none left. I will tell you that the stuff I think you called puppy chow . . I sat down and ate every last morsel of that before the diet started! 🙂 That was so good too! And, Donna’s husband, Clyde, made something called pepper nuts (that aren’t hot like pepper) and I pretty much ate my fill of those too!

Wow – I was hoping it was a diet recipe (ya, right!). As a maybe once a month treat, it wouldn’t be too bad, no? You could halve the recipe.

If you are going to add nuts, would pecans be all right? and also is that salted butter? I also want to make this for a retreat I am going to in April. When you put it in the oven to bake… is it in the roasting pan?

Ok, MY silly question is…. what is “soda?” I can’t imagine you’re talking about baking soda?? LOL – that doesn’t sound good, but the rest of this sure does!!!

Yes, baking soda. It makes the melted sugar mixture “fluff” up, and it coats the puffed corn better.
