You’ll probably get two dinner reports this afternoon/evening because I forgot to do one last week for a meal that was worth telling you about.
I fixed Linguine all Carbonara.
While I’m not a big fan of Italian sausage, Vince loves it and we both liked this dish a lot. I served it with crusty bread and a green salad. The recipe calls for green peas but I left them out.
I also made Capicola Bites but instead of using cantaloupe, I used a peach and a mango because I had some that needed to be used. Also, Wal-Mart didn’t have anything except hot Capicola so I chose to use Genoa Salami instead. These were really good and tasty and with the balsamic reduction, I think they’re a fantastic appetizer to serve when you want something a bit out of the ordinary.
And, because the peaches were needing to be used, I made mini peach upside down cakes.
The cake was served while warm with Blue Bell Homemade Vanilla Ice Cream. No weight being lost around here but we’re having some good eats!

Oh, my! Looks great. I just fixed PW’s Mac and Cheese with carmalized onions and bacon for diner tonight. And I just rejoined Weight Watchers.
BTW, I’m so happy you are setteled in your “new home”. I live vicarioulsy though you and Vince. I know, I need to get a life!

HA, since becoming pregnant I don’t “watch” my weight… well, I do, but since it’s still a healthy increase I let myself go a little and enjoy the good things. Unfortunately, ice cream is not one of them… *wahhhhh* ever since becoming pregnant I can’t eat it! I miss it… Anyway, the peach cake looks great with ice cream!!

I’m with Lynn – that portion of the peach cake and ice cream would be a teaser for me and hardly any calories for that size. I love ice cream and peach anything! I bet Vince wanted a bigger piece too. It sure looks yummy. Makes me want to thaw some frozen fresh peaches and make a cobbler right now. Opps, can’t it’s after midnight and I’ve got to get up early in the morning. 🙂
