There never seems to be an easy and good way for me to share recipes and recommendations. Today I was thinking I might do a nightly “Dinner Report” on the days we have meals that are worth recommending. It won’t be every night but if you like the things we like and you trust my recommendations, this might work. We’ll try it for a while and see what happens. Feedback is always appreciated.
Tonight we had two recipes I found on the Tasty Kitchen site. Speaking of Pioneer Woman, don’t forget her new TV show starts tomorrow on Food Network (I think it’s Food Network).
We had Avocado Cilantro Lime Salad, Colorado Cowboy Chicken and Pinto Beans. Have I ever told you that cilantro rates right up there with Dr. Pepper and Blue Bell ice cream? Love it!!
The only changes I made were to the chicken. The recipe calls for cooking the chicken til almost done, then wrapping a strip of bacon around the pieces and baking the dish. I didn’t want to run the oven that long so I cooked the chicken til completely done, cooked the bacon separately, then crumbled it over the chicken. The recipe says to pour some of the marinade over the chicken before baking and it sounds like they’re saying to use the marinade that had the chicken in it. I made a bit extra and saved it out . . didn’t put the chicken in it, and then poured that over the chicken breasts before baking them. I baked them only long enough for the cheese to melt – maybe 10 minutes, since my chicken was already done.
The pinto beans were just plain pinto beans. I had searched for a can of green beans but the box I was digging in only had dried beans and canned tomatoes so . . pinto beans worked. I like them better than green beans anyway!
Vince had a glass of wine. I had a Dr. Pepper. I wondered if Vince would like the chicken because it was different — kind of a honey mustard taste (since the dressing has honey and mustard). We don’t often have sweet foods but he loved the chicken!
We’ll have both the Avocado Cilantro Lime Salad and Colorado Cowboy Chicken again!

The chicken looks wonderful. I have been on crutches for one week now so not cooking alot. Thank God for the pressure cooker. I hurt my knee and am probably facing outpatient surgery. The worst part is my sewing room is in the basement. I am going to get down there tomorrow if I have to crawl. Have a good weekend.

I love this idea. I am starting a job in a different department in September that is 8 hours 5 days instead of 3 12 hour shifts. I was thinking I miss your posts about doing a lot of your cooking for the week all on one day. I may need to start doing that. I will be home for supper every night! Thanks for sharing.

Ummm, your version looks so much better than original recipe–love that darker looking sauce drizzling down. Going to have to give this recipe a try; both of us like chicken and a new recipe is always welcomed.

I enjoy your recipes and have learned a lot of different cooking ideas from you 🙂 I now have a pressure cooker (still need to get in the habit of using it first .. lol ) and have used my food dehydrator (yes only once, waiting for more garden veggies!) Non-food … I am trying to learn how to knit!
I want you to know that Others and myself have learned so much more than quilty stuff from you. And how much we/I appreciate it!! Yes, when a neighbor told me about this neat juicer she bought… and described it… I said .. aha… I know what that is…. Judy talked about it on her blog!! I know my friend would read you constantly like I do…. if only she was hooked up to the internet!!

From what I’ve heard, Pioneer Woman has a bad habit of using marinades as sauces (huge no-no, as you already know!), but other than that, her recipes are good. We love her Spaghetti Chicken!!!
