He said pecorino in the video but I bet you could use parmesan or romano. I love recipies that are this casual because they are easy to adjust for individual tastes.

I used pecorino romano because that’s the first one I found in my fridge but parmesan would be fine.
I made for dinner just now and used fresh basil instead of mint and it was delicious.
