This is the easiest recipe and everything can be done ahead of time so all that needs to be done at dinner time is grill the pork tenderloin and fix the side dishes.
Pork Tenderloin with Fruit Salsa
Ingredients:
1 – 3 – 4 pound pork tenderloin
3/4 cup orange juice
1/4 cup lime juice
1/2 cup spiced Rum (or dark rum)
1/4 cup olive oil
1 medium onion, chopped
8 cloves garlic, chopped
3 tsp. oregano
3 tsp. ground cumin
1 tsp. black pepper
Mix all ingredients. Pour over pork loin and marinate overnight.
When it’s time to cook it, remove it from the marinade, throw out the marinade and grill the pork til done.
Fruit Salsa: (Can be made early on the day of serving and kept in the fridge)
1/2 red onion, chopped
1/2 cup orange juice
1/4 cup lime juice
2-1/2 cups chopped pineapple or peaches or strawberries or mango (or a combination)
1 red bell pepper, chopped
1/2 cup cilantro, chopped
1 jalapeno pepper, seeded and chopped (I used about 1/4 tsp. jalapeno powder)
Salt & Pepper as desired
Mix all ingredients and serve over grilled pork.

Question…probably dumb, but I don’t know the answer. Can lemon juice be substituted for lime? I think it should but not sure since sometimes you sue things for the acid and sometimes for the bitter (lime) or the sour/tart (lemon). I don’t like bitter so I don’t like limes, but I love lemons.

We always have pork tenderloin in the freezer. This looks really delicious, and I can gril the tenderloin in my new cast iron grill pan that I got for Christmas. My family thought I was weird asking for the cast iron grill pan, but I love it and have used it a lot, and I would never have bought it for myself.

Fruit salsa also good on fish. I season my fish with a cajun seasoning.
